How to Compare Cooking-Robot Capacity Without Trusting One Headline Number

Sources checked on 25 October 2026. This buyer guide explains how to organise a fair capacity trial for a cooking robot. It does not certify a product, replace the manufacturer's operating instructions or set food-safety rules for a particular jurisdiction.

A headline such as “meals per hour” is difficult to compare unless both suppliers are solving the same task. A cooking cycle may exclude ingredient preparation, replenishment, changeover, cleaning, sanitation, recovery from an alarm and the time needed for staff to verify the result. A useful trial therefore begins with the menu and service window, then records every task that limits deliverable output.

Freeze the menu and portion before timing the machine

Choose a small set of dishes that represents the planned operation, including the ingredients, portion range and variations that matter in practice. Record whether ingredients arrive pre-cut, chilled, frozen or ready to dispense, and identify which preparation steps remain manual. If two suppliers use different preparation assumptions, report those differences instead of combining the results into one ranking.

Define an acceptable serving before the trial. The buyer may need to record portion weight, appearance, temperature where relevant, hold time and rejected output. The exact checks should come from the operator's food-safety programme and local requirements. A machine can complete a motion cycle while the resulting serving still fails the agreed acceptance criteria, so motion count and accepted portions must be reported separately.

Measure a complete service window

Run the agreed menu across a realistic window rather than extrapolating from the fastest individual cycle. Note the start and end conditions, number of operators, replenishment events, container changes, pauses, alarms, retries and rejected portions. Keep the timestamps and observations in the same record. If a supplier demonstrates only one recipe or removes difficult cases, label the result accordingly.

  • Input assumptions: ingredient state, batch size, portion range and preparation already completed.
  • People: number of operators and the tasks they perform during the run.
  • Output: attempted portions, accepted portions, rework and discarded portions.
  • Interruptions: replenishment, recipe change, cleaning, alarms, recovery and manual intervention.
  • Boundary: what the measured time includes and which tasks remain outside the system.

Treat cleaning and sanitation as production requirements

The US FDA Food Code is a model used by jurisdictions for retail and food-service controls; it is not a universal installation certificate. Its equipment and utensil provisions distinguish cleaning from sanitisation and emphasise following operating and chemical instructions. The FDA HACCP guidance also describes written cleaning and sanitation procedures, preventive maintenance and documented training as prerequisite programmes. These principles support asking a supplier for a clear, product-specific cleaning plan before accepting a throughput claim.

During procurement, list every food-contact part and ask who removes, cleans, inspects and reinstalls it. Record the manufacturer's specified agents, concentrations, temperatures, contact times and prohibited methods from the exact current manual. Do not copy a process from an unrelated appliance. Measure the labour and downtime needed for the planned menu and service pattern, including changeovers and end-of-day work. Where local rules differ, the operator must use the applicable authority and its own approved programme.

Ask for a result another person can review

The final trial record should identify the machine configuration, software version, attachments, recipes, operator training, site utilities and test date. Attach the raw run log and explain any excluded attempt. A summary can then show accepted portions per defined service window, labour used, interruption time and unresolved conditions. Avoid turning one demonstration into a guaranteed annual capacity or savings figure unless the agreement defines the assumptions and verification method.
